Description
A rack is from the area on the carcass considered to offer the most tender cuts called the “best end of neck”. Kid racks make a perfect centrepiece for a roast dinner, feeding 2-3 people from a full rack, or are deliciously tender grilled on the barbeque.
If you would like the flavour of the kid rack but don’t want to roast or barbeque, cutlets are a great alternative that can be pan-fried or grilled.
