Sinodun Hill (or Bryn Sinodun) is a pyramid cheese with a fresh, citrus flavour and a creamy, mousse-like texture. As the cheese ages, the flavour deepens to reveal almond and red fruit notes and the rind seasonally develops blue and grey moulds, only adding to the flavour.
Sinodun Hill won Best Artisan Cheese in the World Cheese Awards in 2022, as well as Best New Cheese at the British Artisan Cheese Awards 2017.
