  • 5 large carrots, peeled and chopped in half widthways

  • 2 bulbs of garlic, chopped in half widthways

For the marinade

  • 2 lemons (1 tbsp zest & 4 tbsp juice)

  • 6 garlic cloves, crushed

  • 25g fresh mint leaves

  • 15g fresh coriander

  • 1 tbsp paprika

  • 1/2 tsp fenugreek seeds

  • 2 tsp ground cumin

  • 3 tbsp olive oil

  • 1 1/2 tsp salt

  • 1 1/2 tsp black pepper, ground
